3 CHEESE POTATO CASSEROLE



45 minutes (15 min prep, 30 min cooking)

(Makes: 6 Servings)

Ingredients:
4 cups potatoes, peeld and cubed
8 ounces cream-style cottage cheese
8 ounces sour cream
1/2 green onion, chopped
1 tablespoon fresh parsley, chopped
1 clove minced garlic
1/2 teaspoon salt
1/2 cup cheddar cheese, shredded
Paprika

Preparation:
1. Preheat oven to 350 degrees.
2. Lightly grease a 1 1/2 qrt casserole.
3. Cook the potatoes in boiling salted water
for 15 minutes-or until tender.
4. Drain well.
5. In a large mixing bowl
combine the next 6 ingredients.
6. Mix well.
7. Stir in the potatoes.
8. Spoon potatoes into casserole.
9. Bake for 25 minutes.
10. Sprinkle the cheddar cheese & paprika
11. Bake for 5 minutes or until cheese has melted.
