BACON POTATO BAKE

(Makes: 4 Servings)

Ingredients:

6 medium potatoes,
peeled and par-cooked (half cooked)

aromat

250ml sour cream

4 TSP basil pesto

125ml mayonnaise

125ml full cream milk

125ml grated cheddar cheese

streaky bacon, well cooked until crispy

 

Preparation:
  • Slice the potatoes into rings and layer them in an oblong, ovenproof dish.

  • Sprinkle a generous amount of aromat over.

  • Mix the pesto into the sour cream and pour over the potatoes.

  • Whisk the mayonnaise and milk together and pour this over the potatoes.

  • Sprinkle with cheese.

  • Bake at 180C/350F for 20-30 minutes until the cheese is golden and bubbling.

  • Crumble the bacon over and serve with a crispy, fresh mixed salad.
