HOMEMADE CLAM CHOWDER
A popular soup, this one is delicious.
(Makes: 6 Servings)
Ingredients:
2 Slices bacon, finely cut
1/4 cups Minced onions
2 tbsp Chopped celery
2 (5 oz) cans Clams, reserve liquid
2 cups Peeled and diced potatoes
1/2 cup Hot water
1/4 cup Dry vermouth
1-1/2 cup Milk
2 tbsp Butter
1/2 tsp Salt
2 tbsp Butter
1/8 tsp Cayenne pepper
1/8 tsp White pepper
Preparation:
Saut until brown, onion and celery.
Add liquid from clams, diced potatoes, water and vermouth.
Simmer until potatoes are barely tender.
Add clams, milk, butter, salt, cayenne pepper and white pepper.
Bring to a boil, stirring occasionally. Serve hot.
Note:
To make Manhattan-style clam chowder,
omit milk and add 1-1/2 cups of canned tomatoes.
