PASTA WITH PEPPERS & SALMON



Ingredients:
500g ribbon pasta
1 red pepper, sliced and lightly fried
1 yellow pepper, sliced and lightly fried
250 g brown mushrooms, sliced & fried
100 g smoked salmon, flaked
1/2 cup chopped parsley
juice of 1 lemon
1 tbl spoons olive oil
1 tsp mustard
2 tbl spoons sour cream

Preparation:
Cook pasta & drain
Stir in rest of ingredients
Serve small portions, garnish with chopped spring onion & freshly ground black pepper
Can be served at room temperature
