SWEET POTATO CASSEROLE
(Makes: 6 - 8 Servings)
Ingredients:
4 medium Sweet potatoes
1/2 tsp Grated nutmeg
dash Ground cloves
3/4 tsp Salt
1/4 cup Sugar
2 tbsp Butter
1 Well beaten egg
1/4 cup Cream
1 tbsp Grated orange rind
1/2 tsp Grated lemon rind
2 tbsp Light brown sugar
Preparation:
Cook the unpeeled whole sweet potatoes in
boiling water to cover for 20 to 30 minutes, until tender.
Slip off the skins and mash until smooth.
Add 1 tbsp (15 mL) butter, and remainder
of ingredients except brown sugar.
Beat until fluffy.
Turn the mixture into a buttered casserole.
Melt 1 tbsp (15 mL) butter and brush on top.
Sprinkle with brown sugar.
Bake in 450F (230C) oven for
35 minutes or until brown.
