(Makes: 8 Sandwiches)

1/4 cup ketchup
1/4 cup mayonnaise
6 cups cole slaw mix
1/2 small yellow onion, thinly sliced
1/2 cup sweet pickle relish
salt & pepper, to taste
1 stick (4 ounces) butter
16 slices rye bread
32 slices (about 1 1/2 pounds) swiss cheese
32 slices (about 2 pounds) turkey breast

In a mixing bowl, combine the ketchup and mayonnaise.
Add the cole slaw mix, onion, relish, salt and pepper and toss to coat.

Melt 2 tablespoons of butter in a large skillet.
Add 4 slices of rye bread to the skillet and top each slice with two slices of cheese, then 4 slices of turkey and about 1/2 cup of the coleslaw mixture.

Top the pile with two more slices of cheese and another slice of bread.
Cook the sandwiches over low heat until the bottoms are toasted and the cheese is melted, about 4 minutes.

Turn the sandwiches over, press them down and add two more tablespoons of butter to the skillet.

Cook the sandwiches until the second sides are browned, about 4 minutes more.
Repeat the process to make four more sandwiches.
